Curried Peanut Stew with Kale and Chickpeas

When we were renovating our kitchen I tried some Trader Joe's frozen entrees for easy meals. I found one called Greens, Beans, and Grains that was a stew of kale, tomatoes, peanuts, and chickpeas over couscous. It was delicious and when we got our kitchen back I decided to try to create something similar that would be cheaper and also have slightly larger servings so I would stay satisfied longer. This is what I came up with. I don't know how similar it is to the original, which is no longer available. It is delicious, freezes perfectly, and is easy to make.
If you buy bagged pre-washed kale and pre-minced frozen garlic as I do, the hands-on time of this recipe is only about 15 minutes. This stew can be frozen with cooked rice, couscous or quinoa for future meals that only need to be reheated in the microwave. You can use crunchy or creamy peanut butter.

  • Gather and prep ingredients.

  • Saute onion in olive oil.
    Step 1
  • Add garlic and spices, stirring until fragrant, about 1 minute.
    Step 2
  • Add water. Stir to scrape up any brown bits on bottom of pan.
    Step 3
  • Add chopped kale, stir to wilt.
    Step 4
  • Add chickpeas, tomatoes, and peanut butter and stir to combine. Cover and cook over low for 20 minutes.

  • Serve over rice, quinoa or couscous.

  • Leftovers can be frozen. Let the stew cool and put into individual serving sized containers. You can freeze it with or without rice, couscous or quinoa on the bottom of the container.
