Zucchini Beef One Pot Meal

This is a nice summer one-pot meal if you already have some cooked rice on hand. I often will use ground turkey instead of beef in recipes, but this recipe is better with beef, because it helps create a flavorful broth. The broth makes this great on top of rice. Cilantro is optional, but is nice if you are not part of the group that thinks it tastes like soap.
You could use ground turkey for this recipe, but I like the flavor of this with beef. If you don't have chipotle powder, you can use canned chipotle peppers in adobo sauce. I love the convenience of the powder and it adds the same flavor.

  • Gather and prep ingredients.

  • Heat olive oil in dutch oven or large saucepan. Saute onion a few minutes, until it starts to soften.

  • Add zucchini and salt to the pan. Stir and saute for another 4 minutes.
    Step 2
  • Add chipotle powder and cumin to pan. Stir and saute until fragrant, about 30 seconds.
    Step 3
  • Add ground beef and cook, breaking up meat with a spoon. Cook until meat loses most of the pink. It does not need to brown completely.
    Step 4
  • Add tomatoes with the juice and stir in. Bring to a simmer. Reduce heat to medium-low and simmer for 10 minutes to combine flavors.

  • Stir in optional cilantro if desired.

  • Serve over cooked rice.
