Brown Soda Bread Mix

Since I was making the Brown Soda bread frequently, I decided to make a larger batch of the dry ingredients to simplify the recipe even further. I keep the baggies of this mix in the freezer because wheat flour and the wheat germ can go rancid over time. When you want to make the bread, just mix one baggie of this mixture with 7/8 cup of buttermilk and 1 tablespoon of melted butter and you will have this delicious bread.

It is much easier to make this mixture if you have a digital scale and can measure your ingredients by weight instead of using measuring cups. It is also easier to divide up the mixture into 4 equal portions if you have a scale. The full mix should weigh around 44 or 45 ounces. Each baggie will contain between 11 and 11.25 ounces of mix. If you do not have a scale, start with putting 2 cups of the mixture into each baggie, and then distribute the rest with tablespoons. My baggies were each 2 cups plus 2 tablespoons.

  • Gather ingredients.
    Step 0
  • Mix all ingredients in a large bowl. Whisk for at least one minute to make sure that everything is distributed very evenly. This is important since you will be dividing the mixture into 4 portions.

  • Separate the mixture into 4 freezer baggies. Each bag should contain 11 ounces (or 2 cups + 2 tablespoons) of mix. Store the baggies in the freezer if you can. The wheat germ can get rancid over time at room temperature. But if you will be using the mix in a few months, it will probably be fine to store in a pantry.
