Tortilla Pie

This is basically a deconstructed burrito. Instead of rolling the ingredients up into a packet, it is layered like a lasagna. It looks nice and I find it easier to assemble. This concept can be used with whatever burrito fillings you like. 

I've adapted this recipe from Everyday Food. The original recipe has spinach which I really like in this, but my picky eater complains about cooked spinach, so I just leave it out. Using chipotle powder instead of red pepper flakes adds a bit of smokiness which I like. 

This recipe works best with a leaner beef. I use a 93% or 96% lean ground beef. I personally would not use 90% or lower because it would end up too greasy. I often reduce the amount of cheese used in recipes but did not in this recipe because the cheese helps hold the pie together. The type of cheese is flexible. I like using a cheddar-jack because cheddar adds flavor and Monterey jack melts nicely.

  • Gather and prep ingredients. Preheat the oven to 400°.
    Step 0
  • Trim the tortillas to fit in a 9" springform pan. You can use the bottom of the pan as a guide. Spray the pan with vegetable oil spray.

  • Heat olive oil in a large skillet over medium heat. Add onion, cumin, chipotle powder, salt, and pepper. Cook until onion is softened, about 5 minutes.

  • Add garlic and tomato paste. Cook for another minute or two until garlic is fragrant.

  • Add ground beef. Cook, breaking up meat with a spoon until meat is no longer pink, about 5 minutes.

  • Add corn and cook until corn is thawed, about 2 minutes.

  • Assemble the pie. Place one tortilla at the bottom of pan. Spread 1 1/2" cup of the meat mixture over the tortilla, spread 1/2 cup of shredded cheese over the meat.

  • Place another tortilla on top of mixture. Press gently to compact the pie. Repeat adding meat and cheese two more times. Top with the final tortilla and the remaining cheese.

  • Place springform pan on top of a rimmed baking sheet, to contain any leaks. Bake at 400° for 15 to 20 minutes until the top starts to brown. To remove from the pan, slide a butter knife around the edge of the pan before loosening the sides.

  • With one or two spatulas, move to a cutting board. Cut with a sharp knife and serve.
